Most Cellar Plan holders build a wine collection for future drinking. Make selections twice a year based on your wine preferences, the amount of your monthly contribution and what is already in your cellar, so that wines you select to ensure your cellar is well-balanced with plenty of options for short and long term drinking. If you'd prefer us to make wine selections for your cellar and let one of our wine specialist know what you are looking for.
The speed at which your cellar will evolve is determined by two factors: the target case price you aim for and the amount you choose to invest each month. You’ll be amazed at how quickly your wine collection will grow -

It is important that you closely consult with your personal wine specialist, or allow them to choose for you, when selecting wines for a Drinking & Investment Plan.

New wines to try!!

Hollis Cabernet Sauvignon

This cab is full of cassis and tobacco. Nice and lush, with a medium body great for drinking alone or with a nice grilled steak. The tannins have nice structure ending in a nice finish. Come in and try it!

Spelletich Cellars Chardonnay Reserve

Nice chardonnay, oaky anf buttery. ..sure to please even the most discerning palate

New Greek Wines!! Worth a try!

So....Mitch and I (Carrie) attended a wine tasting put on by Boutari. We learned about their wines and tasted them with food that was not Greek. We were impressed, and now have 4 of their wines in our store.
We selected 2 whites, a red and a dessert wine. These wine will appeal to the Pinot Grigio lover, the Riesling lover, the big red lover and the port lover. Please ask us abbout what wines we brought in for you to try!










NEW WINE!!! Beacon Hill Chardonnay 2008


From the web-site: The precocious, seductive little sister to our Leo's Block Chard is a charmer from the get-go. Zingier and more straightforward than the Leo's Block, it bursts onto the palate like a light, all bustling, lithe flavors of Bosc pears and lime blossoms. No heavy-handed butterscotch here: it's all about the fruit in this wine. The finish is super-clean, with mouth-cleansing acidity that had us all craving some fresh seafood - not too hard when our site is a mere thirty-five miles or so from the sea!

From your wine specialist: This wine is amazing! The fruit is exploding on the tongue, hinting at acidity and making me want more. The pear is so present that this would pair nicely with any white sauce and pasta, even light cheeses and crackers. As I am writing I am drinking this without food and it's fabulous! Crisp and clean, you can drink this now or give it a few years. The acid gives it time to age. You simply must try this! Our main wine buyer, Bear Dalton scores this as a 95!! I agree!

How to Make Pineapple Upside Down Cake Jello Shots

The pineapple upside down cake is one of the most known inverted cakes around. Putting the fruit on the bottom is a delight and surprise to all whom enjoy the dessert. Make these pineapple based adult treats inspired by the dessert cake. Here is how to make pineapple upside down cake jello shots.
Makes 16 shot cups.
Ingredients
  • 3/4 cup (180 mL) boiling water
  • 1 3-ounce box pineapple Jello gelatin
  • 1/4 cup (60 mL) cold water
  • 1/2 cup (120 mL) vodka
  • 1/4 cup (60 mL) butterscotch schnapps
  • 1/4 cup (60 mL) Irish cream
Steps
  1. Dissolve the gelatin into the boiling water in a large bowl.


  2. Measure and pour the schnapps, vodka, Irish cream, and cold water into the bowl. Thoroughly stir until well mixed. Allow the mixture to cool a little.


     

  3. Add a maraschino cherry in plastic shot cups.


     

  4. Carefully pour the Jello mixture over the cherries.


     

  5. Chill in the refrigerator to allow the mixture to fully set and harden.


     

  6. Finished.

Oh, for the love of Pinot they were great!! They even won at the Rodeo this year...Reserve Grand Champion!

Spring time Prosecco Cocktails

Prosecco is a refreshing wine that is perfect for springtime entertaining. It is a popular bubbly pick. Prosecco pairs wonderfully with your favorite light dishes. Although it shines on its own, Prosecco really sparkles in a cocktail. You must mix up some of these great cocktails!
 

Prosecco Spritz (Makes 4 cocktails)

Ingredients
  • 8 oz. chilled Ruffino Prosecco
  • 6 oz. Aperol
  • Chilled Club Soda
  • 4 Orange Slices
Preparation: Combine Ruffino Prosecco and Aperol into glasses over ice, splash with club soda and garnish with orange slice.

The Prosecco Smoothie (Makes 4 cocktails)

Ingredients
  • 16 oz. Chilled Ruffino Prosecco
  • 2 Cups of Plain or Fruit Flavored Yogurt
  • 4 Cups of Chopped Fresh Blueberries and Strawberries
  • Fruit or mint for garnish
Preparation: Combine yogurt and fruit in a blender, process until smooth. Pour mix into glasses, top off with Ruffino Prosecco. Gently stir, garnish with mint sprig or fruit slice.

The Fresco (Makes 4 Cocktails)

  • 16 oz. Chilled Ruffino Prosecco
  • 4 Cucumbers
  • 4 Lime Wedges
  • Hot Sauce
  • Sea Salt
Preparation: Peel cucumbers and puree in blender. Strain cucumber juice into 4 glasses. Top off with Prosecco, finish with a dash of hot sauce and pinch of salt. Garnish with a lime.
