GAME DAY FOOD AND DRINKS!


Grilled Margarita Chicken with Marinade



3-5 pounds boneless skinless chicken breast (washed and trimmed)
Zest of 1 lime (about 1 tablespoon)
Juice of 3 limes (about ½ cup)
Juice of 1 orange (about ¼ cup)
1 jalapeño pepper, minced (seeded and deveined to reduce heat)
5 cloves garlic, minced or grated
2 teaspoons ground cumin
1 teaspoon ground coriander seed
1 teaspoon kosher salt
½ teaspoon fresh ground black pepper
2 ounces El Amo Reposado tequila
¼ cup extra virgin olive oil

Place chicken in a resealable gallon size plastic bag.  Set aside.

Combine all ingredients, except chicken, in a small bowl or measuring cup.  Whisk to combine.  Pour the marinade over the chicken, seal and place in the refrigerator to marinate for 2-3 hours.  Turn chicken occasionally.

Preheat grill to medium-high.  Place chicken on the counter to come to room temp.

Grill chicken about 4-5 minutes on each side.  Serve and enjoy.




Pico De Gallo

This pico de gallo is packed with flavor from lots of freshly squeezed lime juice, cilantro, and jalapeno pepper.  Be sure to season to taste with sea salt, as it makes a huge difference in the final result.  Serve it with chips as a starter or as a topping on tacos and tortillas! 
Makes ~3 Cups
2 cups diced, de-seeded vine-ripened tomato (roughly 3-4 tomatoes)
1/3 cup finely chopped white onion
1 tablespoon minced jalapeno (de-seeded for less heat)
1/3 cup roughly chopped cilantro
2 tablespoons freshly squeezed lime juice
Sea Salt

Directions:
  1. Combine all ingredients in a bowl. Season with salt. 
  2. Best served immediately or refrigerated and used within 2-3 days (if it lasts that long). Enjoy!




Cilantro & Jalapeño Margarita


Makes 4

1 cup Cavalino Reposado Tequila
1 cup freshly squeezed lime juice
1/2 cup triple sec
1/2 cup sugar
Small handful of cilantro
1 tablespoon chopped diced jalapeño
Salt
Chili powder

Add all ingredients to a blender. Blend. Then add 2-4 cups of ice and blend until slushy.  Rub rim of glasses with a lime.  Mix equal parts salt and chili powder together on a plate and dip glasses in!
